3-Ingredient Party Appetizers That Definitely Don’t Say ‘I Just Remembered To Do This’


My cookbook Small Victories is all about finding little moments of success in the kitchen, no matter if you’re making something major like raspberry jam buns that are made with a yeasted dough, or something super simple like a little nosh to have with drinks. The following six appetizers all have just three ingredients and require very little effort. They’re borrowed from a series of lists at the back of the book that outline a few ways to get a lot out of a little (whether it’s a bunch of things to do with a can of chickpeas or how to stretch pizza dough, quite literally, into so many different things).

Eliza Honey’s Special
Cucumbers + White Cheese (like queso blanco or Monterey Jack) + Paprika
Alternate slices of cucumber and cheese and dust with paprika and salt, inspired by my friend Eliza Honey whose grandmother once served this to us in Mexico City and I never forgot how simple and good it was.

Salmon Roe
Potato Chips + Crème Fraiche + Salmon Roe
Just put out bowls of each and let everyone assemble their own.

Bite-Size Wedge
Iceberg + Blue Cheese Dressing + Tomatoes
Fill small lettuce cups with chopped tomatoes and drizzle with blue cheese dressing. You could add chopped, cooked bacon, too.

Grilled Cheese Bites
Bread + Cheese + Mayo on The Outside
Make grilled cheese sandwiches, cut into quarters and serve hot. Watch your friends smile.

Cacio e Pepe Popcorn
Buttered Popcorn + Pecorino + Black Pepper
Toss hot popcorn with butter, finely grated Pecorino, and plenty of freshly ground black pepper.
